Pumpkin Fritters





The fall has ended but pumpkin is still on top! I couldn't imagine how to live without this vegetable, thankfully I have lots of reserves. To be honest, pumpkin fritters is my daily meal (not to mention the fact that I love vegetable fritters overall). I have tried incorporating a variety of ingredients to these fritters but I always come back to basics. The recipe is very simple - there are some spices but you can feel free to omit them or substitute with your favourite ones. But don't try to miss this fantastic and healthy thing, make a batch for yourself. Your stomach will thank you.

Pumpkin Fritters 

400g pumpkin, grated
2-3 cloves garlic, minced
½ tsp dried oregano
½ tsp dried basil
½ tsp salt
1/8 tsp chili powder
1 egg, lightly beaten
100g flour
olive oil, to fry
sour cream, to serve

1)  In a large mixing bowl, mix together pumpkin, garlic, oregano, basil, salt and chili powder. Mix in the egg. Stir in the flour and mix just until combined.

2) In a skillet, heat olive oil. Cook fritters on both sides until nicely golden brown. Serve with some sour cream.

  1. What do you mean by shredded pumpkin? I'm glad you are still making pumpkin recipes - my heart still belongs to pumpkin! :) Basic is good and this recipe looks great for those short on time, long on comfort food, days.
